Molahiettes!
Went to another competition yesterday and the Molahiettes did it again! They brought three numbers and came home with three 1st place trophies plus Overall High Score of the day for their kick routine! So proud of these girls - what a fun day, especially since McKenna's Uncle Mark was able to make it to see her Kick routine!

Healthy Recipe of the Month
Sweet Potato Meatless Patties
These are fast becoming one of my favorites!
1 large sweet potato, peeled and grated
1 large zucchini, grated
2 large carrots, peeled and grated
1 sleeve whole-wheat saltine crackers, crushed into crumbs
1 cup cooked brown rice
3 egg whites
Juice of one fresh lemon
1/2 cup ground almonds
1/2 cup ground sunflower seeds
1 tsp sea salt
Pinch of freshly ground black pepper
1 tsp dried oregano
1 tsp dried basil
Preheat oven to 375. Line a large baking sheet with parchment paper.
Combine all ingredients in a very large mixing bowl. With clean bare hands mix everything together very well. You should be able to shape the mixture into balls and then press them into a burger shape.
If your mixture is too dry add another egg white. If it is too wet add more cracker crumbs.
I grate/grind everything in my Cuisinart and it takes no time at all.
Place patties on prepared baking sheet (may need more than one). Place in oven and bake for about 15 minutes, then flip and bake about 15 more. Patties should be golden brown on top.
Great on a bun or alone with your favorite condiments!
