Big Win!

This past Saturday, the drill team went to their 1st competition of the season...they took 4 routines (Kick, Drill, Dance & Pom) and brought home 4 1st place trophies!!

They have worked so hard and it showed - they were AWESOME!

Healthy Recipe of the Month

KALE CHIPS

I know this sounds weird...but let me tell you, these are GOOD!

Rough Recipe:

  • Preheat oven to about 350*
  • Use about 1 salad spinner’s worth of kale. Tear the leaves off the thick stems into bite size pieces.
  • Toss with about 2 tsp+ of olive oil
  • Spread on baking sheet
  • Sprinkle with sea salt
  • Bake for about 15 minutes, until edges are brown and kale is crispy, toss every 5 min or so. They will burn quickly, so be careful
Serves 4 45 calories 1g fat 1.5g fiber

I've seen some other recipes with Parmesan or Asiago cheese sprinkled on, different seasonings, etc.

Christmas!

We had a very quiet Christmas this year, it was just the 5 of us and while we missed having all of our family here or being somewhere with them...it sure was nice to lay around in our pajamas all day!

Ron and I actually did get a chance to get away for the night after Christmas, so we went to Coeur d'Alene and stayed at the resort there. They had a fun little cruise to see Santa's village that I wish I had known about when the kids were small. Of course I forgot my camera, so these are the best I could get with my phone...
All in all, a very nice holiday season!
